Easy to Make 100% Ragi/Nachni Roti
This pizza recipe isn’t just any recipe! Let me tell you why. For the longest time I personally struggled to make millet rotis and other stuff I keep experimenting with using millet flour. Millets are very low in gluten or completely gluten free making it very difficult to knead a dough and roll them out for roti, pizza, tortillas etc. This technique enables you to make soft, puffed rotis that are quick and easy to make. For making a pizza you just need to roll out a bigger and thicker roti like a parantha and cook it. That becomes your pizza base. Let’s begin with the recipe.

 1 cup Ragi/Nachni Flour
 1 cup Water
 Salt - To Taste
 1 ½ tbsp Oil
 ¼ cup Pizza Sauce
 ½ cup Mozzarella Cheese
 Vegetables for Topping – Your choice based on availability
 1 tsp Chilly Flakes
 Salt & Pepper – For seasoning the pizza

  1. Boil the water in a pan. Once it comes to a boil, add salt, oil and the flour. Switch off the flame and mix the flour and water very well till it all comes together.
  2. Let it rest for 2 minutes till it cools down.
  3. Now bring out the cooked flour onto a clean work surface and knead it without adding anything for
    1 minutes.
  4. Divide the dough into 2 parts.
  5. Using dry flour, roll out the dough to a 6-inch diameter circle.
  6. Heat your roti tawa.
  7. Place your rolled-out roti onto the tawa and cook completely using oil, till slightly crisp (like you would cook a parantha).
  8. Now bring the tawa off the flame, spread the pizza sauce and then grated cheese onto the roti, which is now your pizza base, add vegetables, season with salt, pepper, chilly flakes ad mixed herbs.
  9. Cook the pizza again, covered with a lid, on medium heat, for 3-4 minutes.
  10. Now uncover & cook for another 2 minutes or till the base is completely crisp.
  11. Repeat the process for the second pizza.
  12. Slice and serve hot!
