Loukoumades – Greek Doughnuts

I love indulging in these bite sized, melt in the mouth, super airy and light doughnuts. Loukoumades are traditionally made with eggs, hence I will b sharing an egg based and eggless version of the same. I am sure this is going to be your go to dessert for family and friends because it is just so simple and quick. Hey, did I mention that these are be baked too????

 50 g All Purpose Flour/Maida
 ¼ tsp Salt
 1 tbsp Powdered Sugar
  tsp Instant Yeast
 20 g Eggs/Milk
 2 tsp Melted Butter
 ¼ cup Castor/Powdered Sugar
 ½ tsp Cinnamon Powder
 Oil for frying
 1 tbsp Milk Wash (1 tbsp Milk + 1 tsp powdered sugar) If baking

  1. Sift together flour, salt, sugar and yeast.
  2. In another bowl, mix milk and melted butter. Warm for few seconds in the microwave to bring to lukewarm temperature. In case using egg, add it after the milk has cooled down a bit. In case using entire milk then use the full quantity while warming.
  3. Now combine the flour bowl and milk bowl contents and mix well.
  4. Rest aside till the batter doubles in volume (approx. 30-40 minutes).
  5. Heat the oil to approximately 180 degrees or the temperature you use to fry bhajias.
  6. Mix the castor sugar and cinnamon and a bowl.
  7. Transfer the batter into a piping bag and snip the edge 1 inch wide.
  8. Once the oil is ready, begin piping 1-inch balls and cutting using scissors as shown during the lie.
  9. Turn each of the doughnuts once in between while frying. Total frying time would be 3-4 minutes, till golden brown in colour.
  10. Remove and absorb the excess oil using kitchen paper.
  11. Immediately toss the doughnuts into the spice mix and roll till fully covered.
  12. Go ahead and enjoy them hot!
NOTES

  • These doughnuts taste yum with cinnamon sugar but if you like you can drizzle honey, melted chocolate or sugar syrup along with some chopped roasted nuts.
  • Loukoumades taste the best freshly made and warm.
  • Can be stored in the refrigerator and warmed in the microwave.

  • In case you like to bake, grease the mould you are using, pipe or pour the batter into small cupcake moulds, apply a light milk wash and bake at 180 degrees Celsius for 12-15 minutes or till light golden in colour.
