Eggless Pancakes

This is my go-to recipe of all time. Ever since I started baking and cooking, about 10 yrs ago (yes I didn’t cook much before that), I have been making this. In different seasons I pair it with various fresh fruits, whipped cream, vanilla Chantilly, ice cream, fruit compote or when I run out of everything, simple maple syrup and chocolate sauce does the trick. Very glad to share it here with you all!!

Yields3 Servings
 1 cup Flour
 1 cup Milk
 2 tsp Baking Powder
 1 tbsp Powder or Castor Sugar
 1 tsp Vanilla Essence
 1 tbsp Oil
 2 tbsp Melted Butter
 Butter – For cooking
 Water – A little to adjust the consistencyer
 1 pinch Cinnamon

  1. Sift together flour, baking powder, sugar and cinnamon
  2. In another bowl, whisk together milk, vanilla essence, oil, water and melted butter.
  3. Now combine the contents of both the bowls and mix gently.
  4. Heat 1/2 tsp butter in a pan.
  5. Add 1 ladle full of batter and cook on medium high heat till almost cooked from 1 side.
  6. Flip and cook for another 1 minute and it’s done.
  7. Serve with ice-cream or/and fresh fruits.
NOTE

Here is another tip. You can add 1 Tbsp of cocoa powder to the dry mix and adjust the consistency with water/milk and make the best chocolate pancakes ever!!
