This is my go-to recipe of all time. Ever since I started baking and cooking, about 10 yrs ago (yes I didn’t cook much before that), I have been making this. In different seasons I pair it with various fresh fruits, whipped cream, vanilla Chantilly, ice cream, fruit compote or when I run out of everything, simple maple syrup and chocolate sauce does the trick. Very glad to share it here with you all!!
- Sift together flour, baking powder, sugar and cinnamon
- In another bowl, whisk together milk, vanilla essence, oil, water and melted butter.
- Now combine the contents of both the bowls and mix gently.
- Heat 1/2 tsp butter in a pan.
- Add 1 ladle full of batter and cook on medium high heat till almost cooked from 1 side.
- Flip and cook for another 1 minute and it’s done.
- Serve with ice-cream or/and fresh fruits.
Here is another tip. You can add 1 Tbsp of cocoa powder to the dry mix and adjust the consistency with water/milk and make the best chocolate pancakes ever!!
