Arbi is one such vegetable that some people hate it and some people absolutely love it. The recipe I am sharing here today is one that can convert the haters! Well, at least I sure hope so. By the way, I learnt this recipe from my mom and she learnt it from her mom!! I’ve made a small change though – I did not deep fry it but used the air fryer for making it.

 250 g Arbi
 Salt to Taste
½ tsp Kashmiri Red Chilly Powder
¼ tsp Spicy Red Chilli Powder
 ¼ tsp Turmeric
 ½ tsp Dry Mango Powder
 ½ tsp Chaat Masala
 ½ tsp Jeera Powder
 ½ tsp Coriander Powder
 1 tbsp Oil
 Lemon Juice - To Taste
 Coriander - To Garnish

  1. Wash and clean the arbi and pressure cook on medium high flame for 2 whistles.
  2. Remove and cool. Apply oil in your hands and peel the skin.
  3. Cut into 1 cm thick discs. Drizzle the oil over the cut arbi and add all of the spices. Toss the bowl to coat each piece well.
  4. Save the lemon juice and coriander for later.
  5. Pre-heat the air fryer at 180 degrees.
  6. Now cook the arbi for 15-20 minutes of until slightly golden.
  7. Remove, drizzle some lemon juice, garnish with coriander and serve hot!
NOTES
2

  • In case you choose to deep fry, do not apply any oil or spices. Do that process after frying.
  • You can bake them in the oven too at 180 degrees till slightly golden.
