Pizza, Pasta, Lasagne Sauce

Sharing with you today one of my most favourite sauces. I use it for almost any Italian recipe which requires a tomato-based sauce, marinara, pomodoro or arrabbiata. It’s been a favourite from our Dips, Sauces & Spreads workshop, and once you try it, it’ll be your home favourite too!! You will never ever again buy pizza sauce form the market, after tasting how delicious this is, I give you my word for it!

 1 tbsp Oil
 1 tbsp Butter
 1 tbsp Garlicminced
 1 piece Onionlarge finely chopped
 2 pieces Tomatoeslarge finely chopped
 Salt – To Taste
 ½ tsp Pepper
 1 tsp Sugar
 2 tsp Mixed Dry Herbs
 1 tsp Chilli Flakes
  cup Fresh Basil (optional)
 ½ cup Tomato Puree (market bought)
 ½ cup Hot Water

  1. Heat the butter and oil in a pan, add minced garlic, sauté till lightly brown.
  2. Add chopped onions, sauté well till slightly brown.
  3. Add salt, pepper, chilli flakes, sugar and mixed dried herbs, mix well. Add in chopped tomatoes cook covered, till soft (almost pureed).
  4. Add in the tomatoes puree, sauté well for few minutes. Add ½ cup of boiling water and let it reduce on low flame for 5 minutes.
  5. Once thickened, add chopped fresh basil leaves, mix well, and set aside to cool.
  6. Use directly for lasagna or pasta and puree and use for pizza.
NOTES

  • In case you do not have tomato puree, increase the quantity of tomatoes by 2 and use Kashmiri red chilli powder for added colour.
  • You can use this sauce for pizza directly as well.
  • This sauce freezes well for 3 months in the freezer. Store in a small portion. Thaw only as much as you need.
  • You can increase the level of spice as per your preference.
  • Please use market bought puree and not homemade.
